“Kid Food” on a Cold Day

It was even colder today than yesterday…so cold, in fact, that THERE WAS NO SCHOOL!!! I got a phone call at 4 a.m. telling me that school had been canceled!

Adam made dinner tonight, but despite my asking, he didn’t want to write the blog… so I’ll write about it!
We had a very “kid” friendly (despite our ages) dinner of:

  • hot dogs and beans
  • bbq baked potato chips
  • salad with baby tomatoes and low fat Caesar dressing
  • Whole grain crust frozen pizza (the Archer Farms brand from Super Target, by far the BEST frozen pizza I’ve had! Thanks Beadie!

After a few requests from various readers, I decided to post pictures of the smaller, furrier members of our household… our 3 amazingly cute pets!

First, there’s Raven. Raven is a 9-year-old Rottweiler, and quite possibly one of the sweetest, most loving dogs I’ve ever known! She “smiles” on command, but apparently not for the camera. She sleeps at our feet every night, and is a fantastic companion!

Next, we have Ozzy… Adam swears that one day, Ozzy will try to take over the world! He’s very smart, probably too smart for his own good. He likes playing with string, like any other cat, but he also will not eat from his bowl if the quantity left is less than 3 crunchies deep. He will meow at the door when Adam gets home.

Last, but not least, we have Big. Big was adopted by my stepdad, David about in 2003 or so. She’s always been a super-loving cat, and we’ve always joked that if she could snuggle UNDER our skin, she would! When David and my mom got married, Big and one of our older cats, Timmy, didn’t get along. That’s how Big came to live with James. She lived with James for 2 years until I got my own apartment, and then she came to live with me. She sleeps on my head every night. Literally, on my head. She has definitely lived up to her name…she’s BIG!

Buffalo Chicken Salad

Since it’s Sunday, I spent literally the entire day doing NOTHING and it was FANTASTIC! Dinner time rolled around and I wanted to make something simple and satisfying.

Wait! Rewind! Last night, after eating a frozen pizza for a late lunch, Adam made us the most beautiful salads for a late dinner. Look at the presentation of the hard boiled egg!

Since we still had a bunch of “salad stuff” left over, I decided to make buffalo chicken cutlets to put on top of a romaine salad with baby tomatoes, fat free feta cheese, salt and pepper croutons, and low fat Cardini’s Caesar dressing.

Buffalo Chicken Cutlets

Ingredients

2 chicken breasts

1/4 c. seasoned bread crumbs

2 tsp Frank’s Red Hot wing sauce (or to taste)

2 tsp. olive oil

Directions

Pound the chicken breasts to a 1/2″ thickness between two pieces of plastic wrap. Pour the bread crumbs into a shallow bowl or plate, and evenly coat the chicken with the bread crumbs. Heat the olive oil in a large frying pan, and once hot, add the chicken. Sprinkle the top of the chicken with 1/2 of the Frank’s sauce, flip, then sprinkle the rest on the other side.  Slice and place atop a salad, or eat alone.

This will definitely be added into our rotation!

Funky Salad

I’ve been in a bit of a funk today.

Exactly 2 years ago, well… 2 years ago Nov. 29, my grandmother was diagnosed with cancer. We put her in Hospice Care on Christmas Day, and she passed away a month later. Something about this time of year always has gotten to me since it’s dark when I leave for work and dark when I get home. Something hit me today though… it was snowing, dark, slippery… and I remembered driving to my grandma’s house in her last weeks in very similar weather. I got extremely sad that she won’t be here for our wedding next year…well, at least not in body.

And now that I’m tearing up again, on to dinner!

I hit Trader Joe’s yesterday, and bought some beautiful produce and chicken, and thought that there was no better way to use it than in a beautiful salad. No recipe, just some sauteed chicken with a little garlic, and then a mix of greens and veggies:

This salad features:

  • fresh baby spinach
  • cherry tomatoes
  • chopped fuji apple
  • fat free feta cheese
  • dried cranberries and mixed seeds
  • sauteed chicken

I later topped this with Penzey’s Green Goddess, which I adore!

I’m off to veg out (no pun intended) for the rest of the night… and try to shake my funk.
